Do not drain. Place in crockpot add 1 TB Green Chili Powder and 1 TB Red Chili Powder and peeled, cubed potatoes and cook on low for 4 hours. Cut 4-6 slices of bread into cubes and let dry. Mix into meat mixture. The purpose of the bread is to bind the meat mixture together. This is what makes it the most authentic and correct texture for burritos and tacos.

Heat one package of flour tortillas in the microwave. Place a large spoonful of meat in the center of the warm tortilla, top with a good amount of grated cheese. Fold both sides of the tortilla into the center, then fold and roll up. Wrap first in waxed paper (to keep it moist) then in foil (to keep it warm).

These can be tossed in the oven "as is" - they can be put in a cooler and kept fairly warm for several hours for a ski trip or picnic or they can be frozen and microwaved (after removing foil) later.

I've never made these the same way twice. I like to mix it up - sometimes I use hot spicy sausage and sometimes I use a left over sunday roast shredded. The concept is still the same - cooking the meat until it's very soft and adding spices/potatoes/bread. This can also be used for tostadas or tacos.

Meat Loaf

1 lb ground beef
1 lb sausage (regular Jimmy Dean)

2 eggs

1 cup oatmeal

1 cup bread crumbs (I use Progresso Italian Style)

Dump all into a big bowl and mix with your hands until well incorporated. Grease the inside of the bowl with butter. Put dough in bowl and cover with plastic wrap sprayed with Pam so it doesn't stick. Allow to rise in a warm place until double in size. Sprinkle counter with flour and dump dough onto counter. Dough is now ready to roll out and cut into desired shape /size roll. (Do not handle dough too much or rolls will be tough and won't rise properly) Place on greased baking sheet or cake pan. Allow to rise in a warm place until doubled in size (1 hour) Bake in a 375 oven for 15-20 minutes or until browned to your satisfaction. Brush with melted butter while hot.

Apple Bread

3 TB Butter (melted)
3/4 Cup Sugar (or Sucanat)
1 Egg
1 1/2 Teaspoon Cinnamon
1/2 Teaspoon Salt
1 Teaspoon Baking Soda
1 Cup Flour
3 Cups Chopped Apples
1/4 Cup Chopped Nuts
1 Teaspoon Vanilla

Mix Egg, Sugar, Butter, then add dry ingredients and vanilla, it should be a pretty dry- once you fold in the apples it will look more like a lumpy mess. In another bowl, combine the flour with baking powder, baking soda and salt. Gradually stir dry ingredients until well blended. Cover and chill for at least an hour.

When ready to bake, preheat oven to 400 degrees. Line cookie sheets with parchment paper (silpat and waxed paper do not work - must be parchment paper!) Mix 1/4 cup flour and 1/4 cup powdered sugar - use this to lightly dust your work surface. Roll dough into about 1/4 inch thickness. cut into desired shapes using cookie cutters. Use spatula to lift and place on cookie sheet - approx 1 inch apart. Bake 8-10 minutes and allow to cool for about 5 minutes before lifting onto wire rack to cool. Do not let edges of cookie brown.

Frosting; In a small bowl, mix powdered sugar, with 2 TB milk. Beat in corn syrup and flavoring extract until icing is smooth and glassy. You do not want it too thin. Put frosting into a plastic bag and cut just the very tip of the corner of the bag off. Squeeze frosting evenly onto the cookie to flood it completely. use the tip of the bag to drag the frosting accross the desired coverage area. It dries fairly quickly, so add any sprinkles immediately or they won't stick. Allow frosting to dry for an hour before stacking cookies on top of each other. place wax or parchment paper in between layers of cookies if you stack them.

Options: This cookie dough freezes well. Baked/unfrosted cookies freeze well too. Freeze them and frost them on another day if you like.

Irva's Pecan Pie

3 eggs
1 cup brown sugar
1 tablespoon all-purpose flour
1 cup corn syrup
2 tablespoons butter
1 teaspoon vanilla extract
1 1/2 cups pecans (whole)
(I like alot of pecans - I use about 2 cups)
1 (9 inch) unbaked pie shell

Preheat oven to 350 degrees.

Beat eggs, stir in sugar and flour, then the syrup, butter and vanilla. We always had this on motor home trips. It reheats very well.

Andes Mint Cookies

Andes Mint Cookies

From my friend Sharon Stark Batson who got married and moved far away! I miss her!

Ingredients:
3/4 cup butter or margarine
1 1/2 cup brown sugar, packed
2 tbsp water
12oz pkg semisweet chocolate chips
2 eggs
2 1/2 cups flour
1 1/4 tsp baking soda
1/2 tsp salt
1lb Andes mints

Heat butter, sugar and water in saucepan until butter is melted. Remove from heat and add chocolate chips and stir until melted. Pour into large bowl and cool 10 minutes. Beat in eggs, then add flour, soda and salt and beat just until blended. Chill dough for an hour. Don't worry that the dough seems a little bit oily - it turns out fine once baked. Line cookie sheets with foil. Roll dough in 1" balls and place 2" apart on cookie sheets. Bake at 350 degrees Fahrenheit for about 11 minutes. Remove from oven and immediately place an Andes mint on each cookie. After they melt, swirl each one with a knife (think of it like spreading frosting on a cake but with the Andes mint instead) and remove cookies from cookie sheet and let them cool until chocolate is solid.

Some like to add an additional cup of chocolate chips after the dough has cooled just a little, so they melt a little but not completely. Also, you don't necessarily have to chill the dough for an hour. Nor do you have to be picky about rolling it into balls. It's just as good to plop the stuff on the foil haphazardly while clicking your heels about the chocolatey minty goodness to come.

Chicken Tortilla Soup

2 Cans Chicken Broth
1 Can Black Beans Rinsed
1 Jar (11 1/5 ounces) Pace Thick & Chunky Salsa
(also good: container of fresh salsa made in the produce department or Costco Mango Salsa)
2 Chicken Breasts Baked and Cubed

Warm up, Serve over Cumbled Tortilla Chips with Cheddar Cheese, Sour Cream and Guacamole

Chinese Chicken Salad

1 Small head Napa Cabbage
5 Green Onions
2 Pkg Oriental Flavor Ramen Noodles
½ Cup slivered almonds
1 TBsp Poppy Seeds
3 TBsp Sesame Seeds
4-6 Roasted, Boneless Skinless Chicken breasts cubed

Dressing:
6 TBsp Apple Cider Vinegar
1/3 Cup Sugar
1 Cup Salad Oil
2 Seasoning Packets from Oriental Flavor Ramen Noodles
Toast almonds and seeds in 375 oven for 12 minutes.
